Our Sorrel Jelly (Great Taste Winner 2024)is made using flor de Jamaica (known also as wild hibiscus in the West Indies) which is steeped in freshly boiled water with cinnamon sticks, cloves and dried bayleaf. The water turns a deep burgundy colour. In the Caribbean this is usually enjoyed sweetened and chilled especially around Christmas time but it can be consumed throughout the year. I decided to make Sorrel Jelly using this favourite seasonal beverage because it was the perfect reminder of the Caribbean. It is both sweet and tangy, with a kiss of cinnamon. Wonderful on toast, crumpets, crackers, with cheese or in porridge! Anything you usually put jam on, you can use this jelly instead!

West Indies Pantry Sorrel Jelly (200g) contains:

• Organic Sorrel Juice  (no sugar added, diluted)
• Cane jam sugar (with pectin)
• Spices (cinnamon, clove and bayleaf)
• Organic Orange juice
• Organic lemon juice

No preservatives. No gelatine. Gluten free.

This tea towel was inspired by this small, beautiful chapel based in Campsie Glenn, Scotland. When we arrived in Scotland in the summer of 2021, my husband started cycling along the lovely, serene canal path for his daily commute as well as to explore bits of Scotland he could reach on his bicycle. On one outing he stopped at a cafe to refuel, and the cafe owner recommended that he cycle to the chapel. Once there, he took a picture on his phone, later on he did his first watercolour sketch of the chapel. I was blown away by the beauty of it and so we made it our Scottish Tea Towel design. A reflection of Scotland's beauty and heritage.
